Meet Will Gause, the driving force behind our award-winning food truck operation. Built from the ground up, Will turned a vision into reality — and the people noticed. Billy G’s has been voted (3 Years Running) Best Food Truck by readers of The State Newspaper, covering Columbia and surrounding areas in South Carolina.
In 2023, Billy G’s Carolina BBQ made history as the exclusive BBQ vendor at the South Carolina State Fair—the first time BBQ had been served there since the 1960s. It was more than an invitation—it was a recognition of our commitment to flavor, hospitality, and the spirit of South Carolina. We were honored to serve thousands at the state’s largest event, and proud to carry the torch for BBQ tradition.

We LOVE events — and nothing brings the fun like a Food Truck! We’ve been serving the Midlands since 2004, and we know how to throw a good Southern gathering. From neighborhoods and businesses to fundraisers, corporate events, weddings, and rehearsal dinners, folks call us every day to roll in and feed a crowd.
